Ingredients:
200g FIFY’S GLUTEN-FREE Teff Penne
1 red bell pepper, sliced
1 zucchini, sliced
1 yellow squash, sliced
1 red onion, sliced
1 cup cherry tomatoes, halved
2 tablespoons olive oil
1 teaspoon dried Italian herbs
Salt and freshly ground black pepper, to taste
Fresh basil leaves, for garnish (optional)
Instructions:
Preheat the Oven:
Set your oven to 200°C (400°F).
Prepare the Vegetables:
In a large bowl, combine the sliced red bell pepper, zucchini, yellow squash, red onion, and cherry tomatoes.
Drizzle with olive oil, sprinkle with dried Italian herbs, salt, and pepper. Toss to coat evenly.
Roast the Vegetables:
Spread the vegetables on a baking sheet in a single layer.
Roast in the preheated oven for 20–25 minutes, or until tender and slightly charred.
Cook the Teff Penne:
