Teff Penne with Roasted Vegetables

Ingredients:

  • 200g FIFY’S GLUTEN-FREE Teff Penne

  • 1 red bell pepper, sliced

  • 1 zucchini, sliced

  • 1 yellow squash, sliced

  • 1 red onion, sliced

  • 1 cup cherry tomatoes, halved

  • 2 tablespoons olive oil

  • 1 teaspoon dried Italian herbs

  • Salt and freshly ground black pepper, to taste

  • Fresh basil leaves, for garnish (optional)

Instructions:

  1. Preheat the Oven:

    • Set your oven to 200°C (400°F).

  2. Prepare the Vegetables:

    • In a large bowl, combine the sliced red bell pepper, zucchini, yellow squash, red onion, and cherry tomatoes.
