Ingredients:
200g FIFY’S GLUTEN-FREE Teff Casarecce
3 tablespoons basil pesto
1 cup cherry tomatoes, halved
2 tablespoons extra virgin olive oil
Salt, to taste
Freshly ground black pepper, to taste
Grated Parmesan cheese (optional, for serving)
Instructions:
Cook the Pasta:
Bring a large pot of salted water to a boil.
Add the Teff Casarecce and cook according to the package instructions until al dente.
Reserve 1/2 cup of the pasta water, then drain the pasta.
Prepare the Sauce:
In a large skillet, heat olive oil over medium heat.
Add the cherry tomatoes and sauté for 2–3 minutes until slightly softened.
Stir in the basil pesto and cook for another minute.
Combine Pasta and Sauce:
Add the drained pasta to the skillet and toss to coat evenly.
If needed, add a splash of reserved pasta water to loosen the sauce.
Season and Serve:
Season with salt and freshly ground black pepper to taste.
Top with grated Parmesan if desired.
Serve immediately and enjoy the fresh, aromatic flavors!
