  • 200g FIFY’S GLUTEN-FREE Teff Penne
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 250g mushrooms, sliced
  • 100g fresh spinach leaves
  • 200ml dairy-free cream (such as coconut or oat cream)
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the teff penne according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
